- 1 1/2 cups rolled oats
- 1 apple, diced small
- 3/4 cup blueberries
- 2 eggs
- 1/3 cup maple syrup
- Optional: a pinch of cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
- In a large bowl, combine the rolled oats, diced apple, and blueberries. If you’re using cinnamon, sprinkle it in now.
- In a separate bowl, whisk the eggs and maple syrup together until well combined.
- Pour the egg mixture into the oat mixture and stir until everything is evenly coated.
- Transfer the mixture into the prepared baking dish, spreading it out evenly.
- Bake for about 30 minutes, or until the edges are golden and the center is set.
- Allow to cool completely before slicing into bars.
Notes
- Store in an airtight container for up to 3 days.
- For a crispier texture, bake for an additional 5 minutes.
