Ingredients

  • 1 apple, diced small
  • 3/4 cup blueberries
  • 2 eggs
  • 1/3 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, diced apple, and blueberries. If you’re using cinnamon, sprinkle it in now.
  3. In a separate bowl, whisk the eggs and maple syrup together until well combined.
  4. Pour the egg mixture into the oat mixture and stir until everything is evenly coated.
  5. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  6. Bake for about 30 minutes, or until the edges are golden and the center is set.
  7. Allow to cool completely before slicing into bars.
