These apple cinnamon breakfast cookies are soft, chewy, and filled with warm fall flavors. Perfect for busy mornings or cozy snacks, they’re packed with oats, banana, and cottage cheese.

Ingredients

1 medium firm, crisp apple (like Zestar!, Gala, or Honeycrisp), peeled and cored

1 ripe banana, mashed

3/4 cup cottage cheese

2 tbsp maple syrup

1 tsp vanilla extract

1 1/2 cups rolled oats

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp baking powder

1/4 tsp salt

1/2 cup chopped pecans or walnuts (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Using a box grater, grate the apple. Place the gratings in a clean kitchen towel or cheesecloth and squeeze firmly over a sink to remove all excess juice.

3. In a large bowl, mix the mashed banana, cottage cheese, maple syrup, and vanilla until well combined.

4. Stir in the rolled oats, cinnamon, nutmeg, baking powder, and salt until fully incorporated.

5. Fold in the squeezed apple and the optional chopped nuts.

6. Drop rounded tablespoons of dough onto the baking sheet and flatten them slightly.

7. Bake for 16-20 minutes, until golden brown and firm to the touch.

8. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a nut-free version, simply omit the pecans or walnuts.

To make these cookies gluten-free, use certified gluten-free oats.

Store in an airtight container at room temperature for 3 days, in the fridge for 7 days, or freeze for up to 3 months.
