Ingredients
2 cups cottage cheese
3 large eggs
1 large apple, peeled and finely diced
1/2 cup rolled oats or almond flour
1/4 cup maple syrup or honey
1 1/2 tsp ground cinnamon
1 tsp vanilla extract
1 tsp baking powder
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
2. Whisk cottage cheese, eggs, maple syrup, and vanilla in a bowl.
3. Stir in oats (or almond flour), cinnamon, and baking powder.
4. Fold in diced apples.
5. Pour into baking dish and spread evenly.
6. Bake for 35-40 minutes until golden and toothpick comes out clean.
7. Let cool slightly before slicing and serving.
Notes
Use full-fat cottage cheese for best texture.
Can be stored in fridge up to 5 days or frozen for 2 months.
Optional toppings: Greek yogurt, almond butter, or chopped nuts.
