- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup almond flour (or oat flour for a softer texture)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1–2 tsp honey or maple syrup (optional for sweetness)
- 1 tsp baking powder
- Pinch of salt
- 1 medium apple, peeled, cored, and chopped
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with silicone liners or lightly grease it.
- In a bowl, whisk together cottage cheese, eggs, vanilla, and honey/maple syrup until smooth. Add almond flour, cinnamon, baking powder, and salt. Stir until fully combined.
- Fold in the chopped apple evenly throughout the batter.
- Spoon the batter into the prepared muffin tin. Bake for 20–25 minutes, or until set and lightly golden on top. A toothpick should come out mostly clean.
- Let the muffins cool for a few minutes before serving. Enjoy warm or at room temperature for a cozy, protein-packed breakfast!
