- 1 ripe avocado (mashed completely smooth)
- 1/2 cup cottage cheese (blended)
- 1/2 cup cocoa powder
- 2 large eggs
- 1/3 cup maple syrup
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
- In a blender, combine the mashed avocado, cottage cheese, cocoa powder, eggs, and maple syrup. Blend until smooth.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake for 25 minutes, or until the edges are set.
- Let cool. Chill in the fridge for at least 2 hours before slicing.
Notes
- For best texture, chill the brownies before slicing.
- Store leftovers in an airtight container in the fridge.
