  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup almond flour (or rolled oats)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 23 tbsp honey or maple syrup
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 medium apple, peeled and finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a medium-sized baking dish.
  2. In a large mixing bowl, combine the cottage cheese, eggs, almond flour (or rolled oats), cinnamon, vanilla extract, honey or maple syrup, baking powder, and salt. Mix well.
  3. Gently fold in the chopped apple.
  4. Pour the mixture into the baking dish and spread evenly.
  5. Bake for 25–30 minutes or until golden and a toothpick comes out clean.
  6. Let it cool slightly before serving. Enjoy warm.
