  • 2 cups full-fat (4%) cottage cheese
  • 3 large eggs
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup chopped walnuts
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a blender, combine the mashed bananas, cottage cheese, and eggs. Blend until smooth and creamy.
  3. Add the rolled oats, maple syrup, cinnamon, vanilla, and baking powder to the blender. Pulse just enough to combine all the ingredients.
  4. Pour the batter into a bowl and gently fold in the chopped walnuts and chocolate chips.
  5. Transfer the batter into the prepared baking dish, spreading it out evenly.
  6. Bake for 40-45 minutes, or until the center is set and a toothpick inserted comes out clean.
