- 1/2 cup cottage cheese
- 1/2 ripe banana, mashed smooth
- 1 tbsp maple syrup
- 1/4 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- Optional: 1 tsp walnuts, chopped
Instructions
- In a microwave-safe mug, mash the banana until smooth.
- Stir in the cottage cheese, maple syrup, almond flour, baking powder, and cinnamon until well combined.
- If desired, fold in the chopped walnuts for a little crunch.
- Microwave on High for 90 seconds. The cake will be very moist, resembling a warm banana pudding cake.
Notes
- Use a ripe banana for the best flavor.
- Adjust sweetness by adding more or less maple syrup.
- For a nut-free version, skip the walnuts.
