Ingredients

  • 2 ripe bananas (mashed)
  • 1/3 cup peanut butter
  • 1/3 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add in the peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Mix until well combined.
  4. In a separate bowl, stir together the oat flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into bars.
