- 2 ripe bananas (mashed)
- 1/3 cup peanut butter
- 1/3 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup oat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add in the peanut butter, Greek yogurt, honey (or maple syrup), egg, and vanilla extract. Mix until well combined.
- In a separate bowl, stir together the oat flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars.

- Use ripe bananas for best sweetness.
