Ingredients
Scale
- 1 cup cottage cheese (blended smooth)
- 1 large over-ripe banana (mashed very smooth or blended with the cheese)
- 2 large eggs
- 1/2 cup cocoa powder
- 1/2 cup almond flour
- 1 tbsp honey (optional, just for sweetness balance, but can be omitted for fully fruit-sweetened)
- 1 tsp vanilla
- 1/3 cup chocolate chips (crucial for texture)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a blender, combine the cottage cheese, banana, eggs, and vanilla. Blend until the mixture is smooth and creamy.
- In a mixing bowl, combine the cocoa powder and almond flour. Pour in the blended mixture and stir until just combined.
- Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 28–32 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
