- 3 ripe bananas, mashed

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the cottage cheese, mashed bananas, eggs, and honey. Mix until well blended.
- In another bowl, whisk together the oat flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped walnuts, being careful not to overmix the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use ripe bananas for natural sweetness.
- Do not overmix the batter to keep the bread tender.
- Store leftovers in an airtight container for up to 3 days.
