Ingredients

2 cups Cottage Cheese

2 cups Fresh Blueberries

3 Large Eggs

1/2 cup Almond Flour or Gluten-Free Flour

1/4 cup Honey or Maple Syrup

1 teaspoon Vanilla Extract

1 teaspoon Baking Powder

1/2 teaspoon Cinnamon

Instructions

1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.

2. In a large mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, vanilla extract, baking powder, and cinnamon. Mix until well combined.

3. Gently fold in the almond flour and fresh blueberries, being careful not to crush the berries.

4. Pour the mixture into the prepared baking dish, spreading it evenly.

5. Bake for 30–35 minutes, or until the top is set and lightly golden.

6. Allow to cool for a few minutes before slicing into squares. Serve warm or at room temperature.

Notes

Use small curd cottage cheese for a smoother texture.

Frozen blueberries work if thawed and dried.

Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.

Reheat slices in the microwave or oven.
