Ingredients
1 slice sourdough or multigrain bread
1/2 cup cottage cheese (whole milk or whipped)
1/2 cup cherry tomatoes
1 tsp olive oil
1 garlic clove, sliced
Pinch of red pepper flakes
Salt and pepper to taste
Fresh basil, for garnish
Instructions
1. Toast the bread until golden and crispy.
2. Heat olive oil in a skillet over medium-high heat.
3. Add cherry tomatoes and cook undisturbed for 2–3 minutes until blistered.
4. Add sliced garlic and red pepper flakes, sauté another minute.
5. Spread cottage cheese over toast while still warm.
6. Top with blistered tomatoes and garlic.
7. Season with salt, pepper, and garnish with fresh basil.
8. Serve immediately.
Notes
Use whipped cottage cheese for a smoother spread.
Add balsamic glaze or hot honey for flavor contrast.
Top with a poached egg for extra protein.
