- 2 medium-firm apples (like Honeycrisp), peeled, cored, and diced
- 1 tbsp butter
- 1 tsp ground cinnamon
- 2 cups full-fat (4%) cottage cheese
- 3 large eggs
- 1/4 cup maple syrup
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/4 cup thick caramel sauce
- 1/2 tsp flaky sea salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- Melt the butter in a skillet over medium heat. Add the diced apples and cinnamon. Cook, stirring, for 7-10 minutes, until the apples are tender and all the liquid has evaporated. Let cool slightly.
- In a blender, combine the cottage cheese, eggs, and maple syrup. Blend until smooth.
- Pour the mixture into a bowl and stir in the almond flour and baking powder.
- Fold in the cooked apples gently to combine.
- Pour the batter into the prepared baking dish. Drizzle the caramel sauce over the top and sprinkle with the flaky sea salt.
- Bake for 35-40 minutes, or until the center is set. Let cool for 15 minutes before serving to allow it to firm up a bit more.
