  • 2 medium-firm apples (like Honeycrisp), peeled, cored, and diced
  • 1 tbsp butter
  • 1 tsp ground cinnamon
  • 2 cups full-fat (4%) cottage cheese
  • 3 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 cup thick caramel sauce
  • 1/2 tsp flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Melt the butter in a skillet over medium heat. Add the diced apples and cinnamon. Cook, stirring, for 7-10 minutes, until the apples are tender and all the liquid has evaporated. Let cool slightly.
  3. In a blender, combine the cottage cheese, eggs, and maple syrup. Blend until smooth.
  4. Pour the mixture into a bowl and stir in the almond flour and baking powder.
  5. Fold in the cooked apples gently to combine.
  6. Pour the batter into the prepared baking dish. Drizzle the caramel sauce over the top and sprinkle with the flaky sea salt.
