Instructions
- Preheat oven to 375°F (190°C). Grease ramekins.
- Whisk cottage cheese, eggs, syrup, and spices in a bowl.
- Stir in grated carrots and raisins.
- Pour mixture into ramekins and top with pecans.
- Bake for 25–30 minutes.
Notes
- Use full-fat cottage cheese for creamier texture.
- Adjust sweetness by adding more or less syrup.
- Top with extra nuts or yogurt if desired.
