- 2 cups cottage cheese
- 2 cups rolled oats
- 2 large eggs
- 1 cup grated carrots (packed)
- 1/4 cup honey
- 1/4 cup raisins
- 1 tsp cinnamon
- 1/2 tsp ginger
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine the cottage cheese, eggs, honey, cinnamon, and ginger. Blend until smooth.
- In a mixing bowl, stir together the rolled oats, grated carrots, and raisins.
- Pour the blended mixture into the bowl with the dry ingredients and mix until just combined.
- Spread the mixture evenly into a greased baking pan.
- Bake for 35–40 minutes, or until the top is golden and a toothpick comes out clean.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave for 30 seconds before serving.
