Instructions
- Preheat your oven to 350°F (175°C) and grease 10 muffin cups.
- Blend cottage cheese until smooth. Whisk with eggs, honey, and cinnamon in a bowl.
- Stir in almond flour and baking powder until just combined.
- Fold in grated carrots and raisins.
- Divide batter evenly among muffin cups.
- Bake for 22–25 minutes, or until a toothpick comes out clean.
