- 1 large head Cauliflower, cut into florets (steamed until tender-crisp)
- 1 lb Ground Beef (browned and seasoned with salt and pepper)
- 1 cup Cottage Cheese (blended)
- 1/2 cup Sour Cream
- 1 Large Egg
- 1 tsp Mustard Powder
- 1 1/2 cups Sharp Cheddar Cheese (divided)
Instructions
- Steam the cauliflower florets for 5 minutes until tender-crisp. Drain and pat dry.
- Blend cottage cheese, sour cream, egg, and mustard powder until smooth.
- Preheat oven to 375°F (190°C). Mix browned beef, cauliflower, and sauce in a bowl.
- Transfer to a baking dish and top with remaining cheddar cheese.
- Bake for 25 minutes until cheese is bubbly and golden.
Notes
- Steaming and drying the cauliflower prevents sogginess.
- Adjust seasoning to taste.
