- 1 lb Ground Beef (85/15 or lean)
- 1 bag (14-16 oz) Coleslaw Mix (Shredded cabbage & carrots)
- 1 tbsp Sesame Oil
- 2 cloves Garlic, minced
- 1 tbsp Ginger (fresh or paste)
- 2 tbsp Soy Sauce (or Coconut Aminos)
- 1 tbsp Sriracha (optional)
- ¾ cup Cottage Cheese (blended smooth)
- 1 tbsp Mayo
- Garnish: Green onions and sesame seeds
Instructions
- Brown beef in a skillet over medium-high heat. Drain excess grease.
- Push beef aside. Add sesame oil, coleslaw mix, garlic, and ginger. Stir-fry 5–7 minutes until cabbage is tender but crisp.
- Stir in soy sauce and Sriracha. Mix well.
- Turn off heat. Add blended cottage cheese and mayo. Stir until creamy.
Notes
- Use lean beef to reduce grease.
- Blend cottage cheese for smoother texture.
- Adjust Sriracha for preferred spice level.
