- 1 lb Ground beef
- 1 (15 oz) can Black beans
- 1 (15 oz) can Corn kernels
- 2 cloves Garlic
- 1 small Onion
- 1 (10 oz) can Tomatoes with green chilies
- 2 cups Beef broth
- Salt and pepper to taste
- 1 packet Taco seasoning
- 1 1/2 cups Cheddar cheese
- 8 oz Cream cheese
- 1 cup Heavy cream
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add chopped onion and garlic, cook until softened.
- Stir in black beans, corn, tomatoes with green chilies, and beef broth.
- Add taco seasoning, salt, and pepper.
- Bring to a simmer and cook for 15 minutes.
- Stir in cream cheese, heavy cream, and cheddar cheese until melted and smooth.
- Serve hot with your favorite toppings.
Notes
- You can use ground turkey instead of beef for a lighter version.
- Top with sour cream, avocado, or tortilla chips if desired.
- Store leftovers in the fridge for up to 3 days.
