  • 1 (15 oz) can Black beans
  • 1 (15 oz) can Corn kernels
  • 2 cloves Garlic
  • 1 small Onion
  • 1 (10 oz) can Tomatoes with green chilies
  • 2 cups Beef broth
  • Salt and pepper to taste
  • 1 packet Taco seasoning
  • 1 1/2 cups Cheddar cheese
  • 8 oz Cream cheese
  • 1 cup Heavy cream

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add chopped onion and garlic, cook until softened.
  3. Stir in black beans, corn, tomatoes with green chilies, and beef broth.
  4. Add taco seasoning, salt, and pepper.
  5. Bring to a simmer and cook for 15 minutes.
  6. Stir in cream cheese, heavy cream, and cheddar cheese until melted and smooth.
  7. Serve hot with your favorite toppings.

Notes

  • You can use ground turkey instead of beef for a lighter version.
