Ingredients
2 cups cottage cheese
3 large eggs
1 ½ cups chopped pitted fresh or frozen cherries
½ cup almond flour
⅓ cup maple syrup or honey
½ teaspoon almond extract
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking powder
¼ cup sliced almonds for topping
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
2. In a large mixing bowl, combine the cottage cheese and eggs, whisking until smooth.
3. Stir in the chopped cherries, almond flour, maple syrup or honey, almond extract, vanilla extract, cinnamon, and baking powder until well combined.
4. Pour the mixture into the prepared baking dish and spread it evenly.
5. Sprinkle the sliced almonds over the top for added crunch.
6. Bake for 35–40 minutes, or until the top is golden and the center is set.
7. Let it cool for a few minutes before slicing and serving warm.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days.
You can swap the cherries for blueberries or raspberries.
Serve warm or cold, with a drizzle of extra maple syrup if desired.
