A simple and flavorful one-pot chicken and rice dish with Italian seasoning, perfect for a quick family dinner.

Ingredients

  • lbs boneless skinless chicken breasts, diced
  • 2 Tbsp olive oil
  • 3 cloves minced garlic
  • 1 Tbsp Italian seasoning, divided
  • ½ tsp onion powder
  • salt and pepper, to taste
  • 2½ cups chicken broth
  • 1 cup uncooked long-grain white rice
  • ¾ cup heavy cream
  • ⅓ cup grated parmesan cheese

Instructions

  1. Cut the chicken into bite-sized pieces. Season with 1 teaspoon of Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add diced chicken and cook until browned, about 5 minutes. Remove and set aside.
  4. Add garlic to the skillet and cook for 30 seconds.
  5. Stir in chicken broth and uncooked rice. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes.
  6. Stir in heavy cream and parmesan cheese. Add the chicken, remaining Italian seasoning, and onion powder. Season with salt and black pepper to taste.
