- 1½ lbs boneless skinless chicken breasts, diced
- 2 Tbsp olive oil
- 3 cloves minced garlic
- 1 Tbsp Italian seasoning, divided
- ½ tsp onion powder
- salt and pepper, to taste
- 2½ cups chicken broth
- 1 cup uncooked long-grain white rice
- ¾ cup heavy cream
- ⅓ cup grated parmesan cheese
Instructions
- Cut the chicken into bite-sized pieces. Season with 1 teaspoon of Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned, about 5 minutes. Remove and set aside.
- Add garlic to the skillet and cook for 30 seconds.
- Stir in chicken broth and uncooked rice. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes.
- Stir in heavy cream and parmesan cheese. Add the chicken, remaining Italian seasoning, and onion powder. Season with salt and black pepper to taste.
