Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz lo mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, thinly sliced
  • 3 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Cook chicken until golden and fully done (6-8 minutes). Remove from pan.
  3. Add remaining oil to the skillet. Stir-fry bell peppers, carrots, and green onions for 3-4 minutes.
  4. Return chicken to the skillet. Add cooked noodles, soy sauce, sesame oil, and garlic. Toss to combine.
  5. Serve hot.
