- 3–4 boneless, skinless chicken breasts
- 8 oz lo mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrot, thinly sliced
- 3 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Cook chicken until golden and fully done (6-8 minutes). Remove from pan.
- Add remaining oil to the skillet. Stir-fry bell peppers, carrots, and green onions for 3-4 minutes.
- Return chicken to the skillet. Add cooked noodles, soy sauce, sesame oil, and garlic. Toss to combine.
- Serve hot.
Notes
- Adjust soy sauce to taste for saltiness.
- Use pre-sliced vegetables to save time.
- Add more garlic for extra flavor.
