Ingredients
2 lbs boneless chicken thigh cut into 1–1½ inch pieces
3 tablespoons oil
1 large onion, finely chopped
4 cloves garlic, minced
1 inch ginger, grated
2 large tomatoes, finely chopped
1 tablespoon tomato paste
1 teaspoon cumin seeds
2 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon red chili powder
1 teaspoon garam masala powder
½–¾ teaspoon salt (adjust to taste)
½ cup yogurt, whisked
2 tablespoon cilantro, chopped (for garnish)
½ cup water
Instructions
1. Heat oil in a heavy-bottomed pan over medium heat. Add cumin seeds and let them sizzle.
2. Add onions and sauté until golden brown.
3. Add garlic and ginger. Cook for 1 minute.
4. Add chopped tomatoes, tomato paste, salt, coriander, turmeric, and chili powder. Cook until oil separates (5–6 minutes).
5. Add chicken pieces and stir well into the masala.
6. Add ½ cup water, cover, and simmer on medium-low for 15 minutes until chicken is tender.
7. Stir in yogurt and garam masala. Simmer for another 4–5 minutes.
8. Turn off heat, garnish with cilantro, and serve hot with rice or naan.
Notes
You can use bone-in chicken, but cooking time will increase.
For extra richness, stir in a tablespoon of butter with the yogurt.
