- 10 oz fresh spinach
- 1/2 cup Salsa Verde (green salsa)
- 1/2 cup Monterey Jack cheese
Instructions
- Sauté spinach until wilted, then squeeze dry and chop finely.
- Mix chicken, spinach, cottage cheese, and 2 tablespoons salsa.
- Preheat oven to 375°F. Spread salsa in baking dish.
- Layer chicken mixture, top with remaining salsa and cheese.
- Bake for 20 minutes until bubbly and golden.
