- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup chocolate chips
- 1/4 cup honey
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the cottage cheese, rolled oats, chocolate chips, honey, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
Notes
- Store in an airtight container for up to 3 days.
- For extra protein, add a scoop of protein powder.
