- 1 cup cottage cheese
- 1 cup almond flour
- 1/2 cup chocolate chips
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese, almond flour, honey, vanilla extract, baking soda, and salt. Mix until well combined.
- Gently fold in the chocolate chips until evenly distributed throughout the dough.
- Using a tablespoon, scoop out the mixture and place it onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12–15 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookie bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
