- 2 cups old-fashioned rolled oats
- 1 cup cottage cheese (full-fat or 2%, blended smooth)
- 2 cups unsweetened almond milk (or milk of choice)
- 1 large egg
- 1/4 cup maple syrup or honey (optional)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract (optional)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch square baking dish.
- Blend cottage cheese, almond milk, egg, maple syrup, and vanilla extract (if using) until smooth.
- In a large bowl, combine rolled oats, cinnamon, baking powder, and salt.
- Pour wet ingredients over dry ingredients and stir well. Let sit for 5 minutes.
- Pour mixture into the baking dish.
- Optional: Sprinkle with extra cinnamon or chopped nuts.
- Bake for 35–40 minutes until edges are golden brown and center is set.
- Cool for 10 minutes before serving. Serve warm.

- For a smoother texture, blend the cottage cheese.
- Top with fresh berries or extra maple syrup if desired.
- Store leftovers in the fridge for up to 3 days.
