A delicious and healthy cinnamon roll-inspired oat bake with cottage cheese, perfect for breakfast or a snack.

Ingredients

Scale
  • 2 cups rolled oats (old-fashioned)
  • 2 cups milk (dairy or plant-based)
  • 12 scoops vanilla or unflavored protein powder
  • ½ cup Greek yogurt or cottage cheese
  • 1 large egg or flax egg
  • ¼ cup maple syrup, honey, or sweetener
  • 2 tsp cinnamon
  • 1 shot nutmeg
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 tbsp butter or coconut oil
  • 12 tbsp brown sugar (for cinnamon swirl)
  • Optional: chopped nuts, raisins, chocolate chips, or cream cheese swirl

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 baking dish.
  2. Mix dry ingredients: oats, protein powder, cinnamon, baking powder, and salt in a bowl.
  3. Whisk wet ingredients: milk, egg, Greek yogurt or cottage cheese, maple syrup, and vanilla in another bowl.
  4. Combine wet and dry ingredients. Let rest for 5 minutes.
  5. Make cinnamon swirl: melt butter, mix with brown sugar and cinnamon.
  6. Pour half the oat mixture into the dish, drizzle half the cinnamon swirl, add remaining oats, and swirl the rest of the cinnamon mixture.
  7. Bake for 30-35 minutes until golden and firm.
  8. Cool for 10 minutes before serving.

Notes

  • Adjust sweetness to taste.
  • Store leftovers in the refrigerator.
  • Serve with Greek yogurt or a drizzle of cream cheese.
