Ingredients

- 2 cups rolled oats (old-fashioned)
- 1½–2 cups milk (dairy or plant-based)
- 1–2 scoops vanilla or unflavored protein powder
- ½ cup Greek yogurt or cottage cheese
- 1 large egg or flax egg
- ¼ cup maple syrup, honey, or sweetener
- 2 tsp cinnamon
- 1 shot nutmeg
- 1 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract
- 2 tbsp butter or coconut oil
- 1–2 tbsp brown sugar (for cinnamon swirl)
- Optional: chopped nuts, raisins, chocolate chips, or cream cheese swirl
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 baking dish.
- Mix dry ingredients: oats, protein powder, cinnamon, baking powder, and salt in a bowl.
- Whisk wet ingredients: milk, egg, Greek yogurt or cottage cheese, maple syrup, and vanilla in another bowl.
- Combine wet and dry ingredients. Let rest for 5 minutes.
- Make cinnamon swirl: melt butter, mix with brown sugar and cinnamon.
- Pour half the oat mixture into the dish, drizzle half the cinnamon swirl, add remaining oats, and swirl the rest of the cinnamon mixture.
- Bake for 30-35 minutes until golden and firm.
- Cool for 10 minutes before serving.
Notes
- Adjust sweetness to taste.
- Store leftovers in the refrigerator.
- Serve with Greek yogurt or a drizzle of cream cheese.
