- 2 large eggs
- 1 cup cottage cheese (blended smooth)
- 1 cup milk
- 1/4 cup honey
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 cup unsweetened shredded coconut
- 1/3 cup dark chocolate chips
Instructions
- In a medium bowl, whisk the eggs, blended cottage cheese, milk, and honey until smooth.
- Stir in the rolled oats, baking powder, and unsweetened shredded coconut. Let sit for 5 minutes.
- Gently fold in the dark chocolate chips.
- Preheat oven to 375°F (190°C). Pour batter into a greased 8×8 baking dish.
- Bake for 30–35 minutes, or until the top is toasted and a toothpick comes out clean.

- Store in an airtight container for up to 5 days.
- Can be frozen for longer storage.
