Coconut Joy Brownies are a rich, fudgy treat with toasted coconut and chocolate chips, perfect for family snacks.

Ingredients

  • 1 cup cottage cheese (blended)
  • 2 large eggs
  • 1/2 cup cocoa powder
  • 1/2 cup honey
  • 1/2 tsp almond extract
  • 1/2 cup shredded coconut (toasted)
  • 1/4 cup chocolate chips

Instructions

  1. Toast shredded coconut in a dry pan for 2 minutes until golden. Set aside.
  2. Blend cottage cheese, eggs, cocoa powder, honey, and almond extract until smooth.
  3. Fold in half the toasted coconut and chocolate chips.
  4. Pour batter into an 8×8 inch pan. Top with remaining coconut.
  5. Bake at 350°F for 25–30 minutes until a toothpick comes out clean.
