- 2 cooked sweet potatoes
- 1 cup cooked shredded chicken
- 1/3 cup cottage cheese
- 1/4 cup corn
- 1/4 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your skillet or air fryer to medium heat.
- Split the cooked sweet potatoes down the middle and fluff the centers with a fork.
- Combine shredded chicken, corn, cottage cheese, and paprika in a mixing bowl.
- Season with salt and pepper to taste.
- Spoon the mixture into each sweet potato.
- Warm the stuffed sweet potatoes in the skillet or air fryer for 3–4 minutes.
- Let them rest for a minute.
- Serve warm with a sprinkle of extra paprika.
