Soft, fluffy gluten-free buns made with cottage cheese and almond flour. Perfect for sandwiches or toast.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 2 cups almond flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp apple cider vinegar or lemon juice
  • 2 tbsp melted butter or coconut oil
  • Optional: sesame seeds for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese, eggs, apple cider vinegar (or lemon juice), and melted butter (or coconut oil). Mix until well blended.
  3. In another bowl, whisk together the almond flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Using a spoon or your hands, form the dough into bun shapes and place them on the prepared baking sheet.
  6. If desired, sprinkle sesame seeds on top of each bun.
  7. Bake for 20-25 minutes, or until the buns are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • These buns freeze well for longer storage.
