Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 ripe banana (for natural sweetness)
  • 1/2 cup oat flour (or almond flour for gluten-free)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 medium apple, peeled and finely chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. In a blender or bowl, mix cottage cheese, eggs, banana, and vanilla until smooth.
  3. Stir in oat flour, cinnamon, baking powder, and salt until well combined.
  4. Fold in the chopped apples, saving a few pieces to sprinkle on top.
  5. Pour the batter into the prepared dish. Bake for 25–30 minutes, or until golden and set in the middle.
  6. Let the bars cool before cutting into squares. Serve warm or chilled.
