- 1 cup cottage cheese
- 2 large eggs
- 1 ripe banana (for natural sweetness)
- 1/2 cup oat flour (or almond flour for gluten-free)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking powder
- Pinch of salt
- 1 medium apple, peeled and finely chopped
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- In a blender or bowl, mix cottage cheese, eggs, banana, and vanilla until smooth.
- Stir in oat flour, cinnamon, baking powder, and salt until well combined.
- Fold in the chopped apples, saving a few pieces to sprinkle on top.
- Pour the batter into the prepared dish. Bake for 25–30 minutes, or until golden and set in the middle.
- Let the bars cool before cutting into squares. Serve warm or chilled.

- Use almond flour for a gluten-free option.
- Save a few apple pieces for topping for better presentation.
