Instructions
- Blend cottage cheese, maple syrup, and vanilla in a food processor until smooth.
- Transfer to a bowl and mix in oats and protein powder to form a thick dough.
- Finely chop dried apples for even distribution (avoids sogginess).
- Fold in chopped apples, pecans, and apple pie spice.
- Roll mixture into 1-inch balls.
- Chill on a parchment-lined plate for at least 30 minutes to firm up.

- Use dried apples for best texture—fresh apples make bites soggy.
- Adjust sweetness with more or less maple syrup.
