- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 2 large eggs
- 1/3 cup maple syrup
- 2 cups rolled oats
- 1/2 cup vanilla protein powder
- 1 tsp cinnamon
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a blender, combine the cottage cheese, mashed bananas, and eggs. Blend until smooth.
- Pour the mixture into a large bowl. Add the maple syrup, oats, protein powder, cinnamon, baking powder, and salt. Stir until everything is well combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, until the edges are golden and a toothpick inserted into the center comes out clean.
- Cool completely in the pan before lifting out and slicing.
Notes
- Let the bars cool completely before slicing for best results.
- Store in an airtight container for up to 3 days.
