Delicious and nutritious cottage cheese banana bars that are easy to make and perfect for a healthy snack or breakfast.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/3 cup maple syrup
  • 2 cups rolled oats
  • 1/2 cup vanilla protein powder
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a blender, combine the cottage cheese, mashed bananas, and eggs. Blend until smooth.
  3. Pour the mixture into a large bowl. Add the maple syrup, oats, protein powder, cinnamon, baking powder, and salt. Stir until everything is well combined.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25-30 minutes, until the edges are golden and a toothpick inserted into the center comes out clean.
  6. Cool completely in the pan before lifting out and slicing.
