- 2 ripe bananas, mashed
- 3 medium eggs
- 1/2 cup cottage cheese, blended
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 1/2 cups almond flour
- 1 tsp baking soda
- 1 tsp cardamom
- 1 cup + a few blueberries
Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it.
- In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until well combined.
- In a smaller bowl, combine the almond flour, baking soda, and cardamom.
- Add the almond flour mixture to the wet ingredients and mix until just fully combined—don’t overmix!
- Gently fold in 1 cup of blueberries.
- Pour the batter into the prepared loaf pan and sprinkle a few additional blueberries on top, spreading them evenly to prevent sinking.
- Bake in the oven for 50 minutes, covering with aluminum foil after 30 minutes to prevent the top from browning too much.
- Once baked, remove from the oven and allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- Use very ripe bananas for better sweetness and texture.
- Blend the cottage cheese for a smoother batter.
- Check doneness with a toothpick inserted in the center—it should come out clean.
