  • 2 ripe bananas, mashed
  • 3 medium eggs
  • 1/2 cup cottage cheese, blended
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 1/2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp cardamom
  • 1 cup + a few blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it.
  2. In a large bowl, mix together the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until well combined.
  3. In a smaller bowl, combine the almond flour, baking soda, and cardamom.
  4. Add the almond flour mixture to the wet ingredients and mix until just fully combined—don’t overmix!
  5. Gently fold in 1 cup of blueberries.
  6. Pour the batter into the prepared loaf pan and sprinkle a few additional blueberries on top, spreading them evenly to prevent sinking.
  7. Bake in the oven for 50 minutes, covering with aluminum foil after 30 minutes to prevent the top from browning too much.
  8. Once baked, remove from the oven and allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

  • Use very ripe bananas for better sweetness and texture.
  • Blend the cottage cheese for a smoother batter.
  • Check doneness with a toothpick inserted in the center—it should come out clean.
