Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix cottage cheese, mashed bananas, egg, honey, and vanilla extract.
  3. In another bowl, combine whole wheat flour, baking powder, and baking soda.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let the muffins cool before serving.
