Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with a little oil or butter.
- In a large bowl, whisk together the eggs, honey, vanilla, and cottage cheese until the mixture is smooth and creamy.
- Stir in the mashed bananas until well combined and fragrant.
- Gently fold in the rolled oats and baking powder, being careful not to overmix.
- Pour the batter into the greased baking dish and level the surface with a spatula.
- Bake for 35 to 40 minutes, or until the bake is firm and golden on top.
- Allow it to cool slightly before slicing into hearty portions.
