Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 cup bell peppers, chopped
  • 1/4 cup spinach, chopped
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line or grease a square baking dish.
  2. In a bowl, whisk eggs until smooth.
  3. Stir in cottage cheese, shredded cheese, garlic powder, salt, and pepper.
  4. Add bell peppers and spinach. Mix well.
  5. Pour mixture into the baking dish and spread evenly.
  6. Bake 25–30 minutes until set in the center.
  7. Let cool slightly, then slice into squares.
