- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/2 cup bell peppers, chopped
- 1/4 cup spinach, chopped
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Line or grease a square baking dish.
- In a bowl, whisk eggs until smooth.
- Stir in cottage cheese, shredded cheese, garlic powder, salt, and pepper.
- Add bell peppers and spinach. Mix well.
- Pour mixture into the baking dish and spread evenly.
- Bake 25–30 minutes until set in the center.
- Let cool slightly, then slice into squares.

- Store in the fridge and reheat for quick breakfasts all week.
