- 2 cups grated carrots
- 1 cup cottage cheese
- 1 cup oats
- 1/2 cup unsweetened applesauce
- 1/2 cup chopped walnuts
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the grated carrots and cottage cheese until well combined.
- Add the oats, applesauce, walnuts, baking powder, cinnamon, nutmeg, salt, and eggs. Stir until fully incorporated.
- Pour the batter into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely before cutting into squares.
Notes
- Store in an airtight container for up to 5 days.
- Freeze for longer storage.
- Substitute walnuts with pecans if preferred.
