Ingredients

  • 2 cups grated carrots
  • 1 cup cottage cheese
  • 1 cup oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup chopped walnuts
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the grated carrots and cottage cheese until well combined.
  3. Add the oats, applesauce, walnuts, baking powder, cinnamon, nutmeg, salt, and eggs. Stir until fully incorporated.
  4. Pour the batter into a greased baking dish, spreading it evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bars to cool completely before cutting into squares.
