Soft and chewy cottage cheese chocolate chip cookies made with almond flour, protein powder, and natural sweetness.

Ingredients

  • 1 cup cottage cheese
  • 1/4 cup maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 2 tbsp coconut oil, melted
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and line a large baking sheet with parchment paper.
  2. In a small food processor or blender, combine the cottage cheese, maple syrup, and vanilla. Pulse until smooth.
  3. Transfer the mixture to a large bowl and mix in the almond flour, protein powder, and melted coconut oil until well combined.
  4. Gently fold in the chocolate chips.
  5. Using a cookie scooper, form balls of dough and place them on the prepared baking sheet. Press down to flatten each cookie slightly.
  6. If desired, add a few extra chocolate chips on top of each cookie.
  7. Bake for 13–15 minutes, or until the edges are golden brown.
  8. Allow the cookies to set on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • Store cookies in an airtight container for up to 5 days.
  • Substitute honey for maple syrup if preferred.
