Instructions
- Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a blender, blend the cottage cheese until it reaches a smooth consistency.
- In a mixing bowl, combine the blended cottage cheese, egg, maple syrup, and vanilla extract until well mixed.
- Stir in the oats, cinnamon, baking powder, and a pinch of salt until everything is evenly combined.
- Scoop spoonfuls of the dough onto the prepared baking tray, spacing them out evenly.
- Gently flatten each cookie dough scoop to form a round shape.
- Bake in the preheated oven for 12–15 minutes, or until the cookies are soft but set.

- For a sweeter taste, drizzle with a little extra maple syrup before serving.
