  • 1 teaspoon Honey or Sugar (Helps structure)
  • Pinch of Salt

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
  2. Whip the 3 egg whites with the cream of tartar on high speed until stiff peaks form (they stand straight up).
  3. In a separate small bowl, mix the 3 yolks, the 3 tablespoons of smooth cottage cheese, honey, and salt until smooth.
  4. Pour the yolk mixture into the whites. Gently fold with a spatula just until combined. Do not overmix.
