- 3 large Eggs (Separated into whites and yolks)
- 3 tablespoons Cottage Cheese (Strained/drained of liquid, then blended smooth)
- 1/4 teaspoon Cream of Tartar (Better than baking powder for stabilizing egg whites)
- 1 teaspoon Honey or Sugar (Helps structure)
- Pinch of Salt
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
- Whip the 3 egg whites with the cream of tartar on high speed until stiff peaks form (they stand straight up).
- In a separate small bowl, mix the 3 yolks, the 3 tablespoons of smooth cottage cheese, honey, and salt until smooth.
- Pour the yolk mixture into the whites. Gently fold with a spatula just until combined. Do not overmix.
- Scoop 6 mounds onto the pan. Bake for 25–30 minutes until golden.

- Use fresh eggs for best results.
- Ensure the cottage cheese is well-drained and blended smooth.
- Do not open the oven door during baking to prevent collapse.
