- 2 medium salmon fillets
- 6 garlic cloves, minced
- 1 tablespoon olive oil, plus extra for greasing
- 3 tablespoons lemon juice, divided
- 1/2 teaspoon lemon pepper powder
- 8 tablespoons cottage cheese
- 1 tablespoon butter
- 1/2 tablespoon dried basil
- 1/2 tablespoon dried dill
- Salt, to taste
Instructions
- Preheat oven to 400°F.
- Mix olive oil, 2 tablespoons lemon juice, garlic, and salt. Spread over salmon and marinate for 30 minutes.
- Melt butter. Mix cottage cheese with dried dill and basil, and cook gently for 10 minutes.
- Place salmon in a greased baking dish. Drizzle remaining lemon juice and sprinkle with lemon pepper. Bake for 12 to 15 minutes.
- Spoon cottage cheese mixture over salmon and bake for 10 minutes more until topping is golden.
Notes
- For best results, use fresh salmon fillets.
- Adjust salt and lemon pepper to your taste.
- Serve with a side of steamed vegetables or a fresh salad.
