Ingredients

  • 1 cup cottage cheese
  • 1 cup almond flour
  • 1/2 cup egg whites
  • 1/4 cup chia seeds
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon everything bagel seasoning
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it lightly.
  2. In a bowl, combine cottage cheese, egg whites, olive oil, and apple cider vinegar, mixing until smooth.
  3. Add almond flour, chia seeds, shredded cheddar cheese, everything bagel seasoning, baking powder, salt, garlic powder, and onion powder, and stir until well combined.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
