These mini garlic bites are a staple in our home! They’re crispy on the outside, soft and cheesy on the inside, and incredibly easy to whip up with just a few ingredients. Perfect for snacking or as a quick appetizer when friends drop by!

Ingredients

  • 1 cup cottage cheese (225g)
  • 1 cup almond flour (100g)
  • 1 large egg
  • 1 teaspoon garlic powder (3g)
  • 1/2 teaspoon salt (2g)
  • 1/2 teaspoon Italian seasoning (optional)
  • Olive oil spray (for baking)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray it with olive oil.
  2. In a bowl, stir together the cottage cheese, egg, almond flour, garlic powder, salt, and Italian seasoning (if using). Mix until a thick dough forms.
  3. Scoop small spoonfuls of dough and roll them into bite-sized balls (about 1 tablespoon each). Place them on the baking sheet and lightly mist the tops with olive oil spray.
  4. Bake for 14–16 minutes, or until crispy and lightly browned on the outside.
  5. Serve warm and enjoy them on their own or with marinara, ranch, or a garlic yogurt dip!

Notes

  • The dough will be slightly sticky—wet your hands to make shaping easier.
  • For extra flavor, add 2 tbsp grated Parmesan (optional).
  • For extra crispiness, air fry at 375°F (190°C) for 8–10 minutes.
  • These reheat perfectly in the air fryer!
