- 2 cups almond flour
- 2 tbsp coconut flour
- 1/2 cup honey
- 3 tbsp lemon juice
- 1 tbsp lemon zest
- 2 large eggs
- 1 tsp baking powder

- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Blend cottage cheese until smooth.
- Mix almond flour, coconut flour, baking powder, and salt in a bowl.
- In another bowl, whisk eggs, honey, lemon juice, lemon zest, and vanilla extract.
- Combine wet and dry ingredients, then fold in blended cottage cheese.
- Pour the batter into a lined baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before slicing into bars.
Notes
- Store in an airtight container for up to 3 days.
- For a stronger lemon flavor, add extra zest.
- Serve chilled or at room temperature.
