  • 2 large eggs
  • ½ cup almond flour (50 g) (or oat flour for a softer texture)
  • 1 tsp vanilla extract (5 ml)
  • 12 tsp honey or maple syrup (510 ml, optional)
  • ¼ cup chopped pecans (30 g), plus extra for topping
  • 1 tsp cinnamon (2 g, optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a small baking pan with parchment paper or lightly grease it.
  2. In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until smooth.
  3. Stir in almond flour (or oat flour), cinnamon, salt, and chopped pecans until fully combined.
  4. Pour the batter into the prepared pan and smooth the top. Sprinkle extra pecans on top if desired. Bake for 25–30 minutes, or until set and lightly golden.
  5. Allow to cool completely before slicing into bars for the best texture.
