- 1 cup cottage cheese (240 g)
- 2 large eggs
- ½ cup almond flour (50 g) (or oat flour for a softer texture)
- 1 tsp vanilla extract (5 ml)
- 1–2 tsp honey or maple syrup (5–10 ml, optional)
- ¼ cup chopped pecans (30 g), plus extra for topping
- 1 tsp cinnamon (2 g, optional)
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a small baking pan with parchment paper or lightly grease it.
- In a bowl, whisk together cottage cheese, eggs, vanilla extract, and honey or maple syrup until smooth.
- Stir in almond flour (or oat flour), cinnamon, salt, and chopped pecans until fully combined.
- Pour the batter into the prepared pan and smooth the top. Sprinkle extra pecans on top if desired. Bake for 25–30 minutes, or until set and lightly golden.
- Allow to cool completely before slicing into bars for the best texture.
Notes
- Blend the cottage cheese for a creamier, pie-like texture.
- For a richer pecan flavor, lightly toast the pecans before adding.
- Store in the fridge for up to 4 days or freeze individual bars for later.
