Ingredients

  • 1 cup cottage cheese, blended smooth
  • 2 large eggs
  • 1/3 cup cocoa powder
  • 1/3 cup sugar or sweetener of choice
  • 1/4 cup oat flour or all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup mini chocolate chips
  • 1/3 cup creamy peanut butter

Instructions

  1. Preheat your oven to 350°F and grease a mini muffin pan.
  2. In a blender, combine the cottage cheese, eggs, cocoa powder, sugar, oat flour, vanilla extract, and salt. Blend until smooth.
  3. Gently fold in the mini chocolate chips.
  4. Fill each well of the muffin pan halfway with the brownie batter. Add a small dollop of peanut butter into the center, then cover with more batter until nearly full.
  5. Bake for 12 to 14 minutes, or until the edges are set but the centers remain slightly soft.
  6. Cool for 10 minutes before carefully removing from the pan.
