- 1 cup cottage cheese, blended smooth
- 2 large eggs
- 1/3 cup cocoa powder
- 1/3 cup sugar or sweetener of choice
- 1/4 cup oat flour or all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
- 1/4 cup mini chocolate chips
- 1/3 cup creamy peanut butter
Instructions
- Preheat your oven to 350°F and grease a mini muffin pan.
- In a blender, combine the cottage cheese, eggs, cocoa powder, sugar, oat flour, vanilla extract, and salt. Blend until smooth.
- Gently fold in the mini chocolate chips.
- Fill each well of the muffin pan halfway with the brownie batter. Add a small dollop of peanut butter into the center, then cover with more batter until nearly full.
- Bake for 12 to 14 minutes, or until the edges are set but the centers remain slightly soft.
- Cool for 10 minutes before carefully removing from the pan.
Notes
- Store in the fridge for up to 3 days.
- Use a mini muffin pan for best results.
